This quick and easy pie iron dessert will make you think about the tropical islands of the Pacific Ocean.

2 Slices of Bread
Cream Cheese – softened
Pineapple Preserves
Coconut – shredded and sweetened
Butter

Butter the 2 slices of bread and insert into the pie iron halves. Spread a generous layer of pineapple preserves on one slice of bread and cream

cheese on the other slice. Add a thin layer of shredded coconut on one slice. Close and latch the pie iron and heat it until its golden brown.

If you really want the Hawaiian Tropic feeling add crushed macadamia nuts. The smell of coconut will wake up any campfire.

A toasted Fruit Pie Bread Pudding Treat.

This can be cooked in a Square Pie Iron or a Double Pie Iron

2 Slices of Bread – slightly stale
1 Egg – beaten
1 tablespoon Milk
1 drop Vanilla
1 tiny pinch Cinnamon
1 tiny pinch Nutmeg
2 teaspoons – Favorite Jam or Preserves (Grape, Strawberry, Blackberry)

Whisk egg, milk and spices together. Spray the pie iron with vegetable oil. Dip bread slices into egg mixture and place bread on iron. Place jam in center of bread and top with the second slice of bread. Close iron & latch. Trim excess bread, if needed. Cook until golden brown.

This is a very satisfying hearty breakfast.
