1 Small Russet Potato – grated
Onion – finly diced
Salt and Pepper – to taste
Squeeze the excess moisture from the potatoes (if you are no going to use them right away, cover with cold water). Toss potatoes and onions and spices together. Spray both side of the pie iron with vegetable oil. Fill one side of pie iron with a heaping amount the hash brown potato mixture. Close iron & latch. Cook until golden brown.
Estimated cook time is about 4 – 6 minutes.
Serve with scrambled egg or next to a burger.
