This is one of the easiest pie iron recipes. This pie iron recipe with match up with any pie iron sandwich.
1 Small Russet Potato – grated or cubed
Onion – finely diced
Bell Pepper – finely diced
Salt and Pepper – to taste
Squeeze the excess moisture from the potatoes (if you are no going to use them right away, cover with cold water). Toss potatoes, onions, peppers and spices together. Spray both side of the pie iron with vegetable oil. Fill one side of pie iron with a heaping amount the hash brown potato mixture. Close iron & latch. Cook until golden brown.
Estimated cook time is about 4 – 6 minutes.
Serve next to Scrambled Eggs, a Hot Dog or next to a Big Ol’ Hamburger.
